Christian Drouin Coeur De Lion S?lection Calvados: On the Coeur de Lion estate, Christian Drouin Jr. has planted a new orchard in order to preserve the leading varieties of apple from the Auge region, including some that are specific to the Pont-l'Évêque area. Pressed when fully ripe, once only so as to yield nothing but pure juice, and fermented in large oak barrels, these apples produce a rich fruity cider for distillation. This spirit is very good as an after-dinner digestif. Plus, try this sauce: a splash of Calvados with cream and mild soya sauce; heat gently and use as a sauce for roast beef. Distillerie Nusbaumer S?lectionn?e Eau De Vie De Framboise: Raspberry eau de vie is made by fermenting, distilling and then quickly bottling ripe raspberry juice. The rapid process helps retain the true fruit essence, albeit in a very dry form. The resulting spirit is a classic partner in recipes, but at this level, it is a more than worthy substitute for cognac or even whisky. G.E. Massenez Apple Spirit Vieux Calvados: Apple genie-in-a-bottle packaging is really eye-catching (trivia question: how do they get the apple in the bottle?). Attractive medium-gold colour with aromas of apple-cinnamon, cloves, pie crust, caramel and even hints of yellow pear. Dry with a subtle, elegant apple-cinnamon replay. Chill it slightly and serve it as a digestif, or enjoy it with fresh cinnamon scones or baked apples. (Trivia answer: They grow the apple inside the bottle, right on the tree branch!) Nonino Il Pirus Di Williams: Due to the very early burst of warm weather, and then a sudden frost, there may be relatively few pears in Ontario orchards this year. Fortunately, this eau-de-vie is like a pear orchard in a glass. An explosion of pear fruit on the nose, with touches of orange rind and spring flowers too.
