Canadian Club 20 Years Old: Aged 8 years. This whisky has spent 2 years maturing in fresh sherry casks that were used to make Harvey's Bristol Cream. CC Sherry Cask is made in batches, each with its own slight eccentricities. They start out as exactly twenty-seven Jerez sherry butts filled with fully matured, six-year-old CC whisky. This is more than a simple finish, it's a second maturation, during which the whisky assimilates some of the rich , fruity, palomino flavours from the barrel. Canadian Club Classic: 12 Year Old Whisky. CC is the oldest and most influential whisky brand in Canada. Canadian Club is always 'blended at birth' that is, the component whiskies are mixed prior to a maturation of at least five years. Made at Hiram Walker distillery (40% of spirit made here is used for the CC brand), established in 1858. Today, the Canadian Club heritage centre, a replica Florentine palace that Walker built in 1894, remains of the original distillery.
