Description

A revolutionary style created by Francois Chartier - one of the leading sommeliers in the world and an authored & prize-winning expert on the science of flavour - and Tanaka Brewery, one of the oldest breweries in Miyagi. Blending together 6 base sakes much like how fine wine is produced created a sake that offers delicate aromas, a beautiful acidic backbone, excellent complexity, and graceful umami with a potential also to age. The sake has garnered strong praise from Jancis Robinson, who likened it to a young White Burgundy, with 'a complex mix of citrus and herbal notes on the nose, dry, and with good grip & with black pepper on the finish.
