Description

This is made from 100% Pinot Noir using the saignée (bleeding) method; 12 to 24 hours after the start of maceration some of the juice is removed just as it starts to turn pink. After alcoholic and malolactic fermentation in the tanks, it rests sur lie before being bottled in spring. The result is a fruity, meduim bodied wine with glints of fire.
