Empellón Cocina's Fat-Washed Mezcal

Instructions

1. In a large saucepan, heat the rendered bacon fat over low heat until it melts completely.
2. Once the bacon fat has melted, add the bottle of Mezcal to the saucepan and stir well to combine.
3. Allow the Mezcal and bacon fat mixture to infuse for at least 4 hours, stirring occasionally.
4. After the infusion time, place the saucepan in the refrigerator and let it sit overnight to allow the flavors to meld together.
5. The next day, remove the saucepan from the refrigerator and carefully skim off any solidified fat from the top of the Mezcal mixture.
6. In a separate saucepan, combine the water and sugar over medium heat, stirring until the sugar has completely dissolved to create a simple syrup.
7. Let the simple syrup cool completely before adding it to the Mezcal mixture.
8. Once the simple syrup has cooled, strain the Mezcal mixture through a fine-mesh sieve or cheesecloth to remove any remaining solids.
9. Transfer the Fat-Washed Mezcal to a clean bottle or container for storage.
10. To serve, pour the Fat-Washed Mezcal into a glass over ice and garnish with a twist of orange peel.
11. Enjoy responsibly!

Note: The Fat-Washed Mezcal can be stored in a cool, dark place for up to several months. Shake well before each use as some separation may occur.
